Ingredients

  • 1 cup Jowar atta
  • 1/2 cup Jaggery powder
  • 1/4 cup Ghee
  • 1/4 cup Water
  • 2 tbls sliced Almonds and Pistachios For garnish

Instructions

  1. Step 1 – Roast the jowar flour
  2. Heat 1 tablespoon of ghee in a heavy-bottomed pan. Add the jowar atta and roast over low heat for 8–10 minutes, stirring continuously. Take care not to burn the flour, as this can give it a bitter taste. Remove from the pan and keep aside.
  3. Step 2 – Prepare the jaggery syrup
  4. Add the jaggery powder and water to the pan . Heat until the jaggery dissolves completely and starts bubbling .
  5. Step 3 – Combine the ingredients
  6. Lower the heat , add the remaining ghee to the bubbling jaggery syrup and mix. Gradually add the roasted jowar flour, stirring continuously. Mix until everything is well combined, and forms a smooth lump and starts leaving the sides of the pan.
  7. Step 4 – Set, garnish and rest
  8. Transfer the mixture to a greased tray and spread evenly. Sprinkle sliced nuts over the surface. Allow it to rest until completely cool and set. Cut into 8 equal squares.

Notes

Roast the jowar flour carefully over low heat. Avoid over-roasting, as burnt flour can taste bitter.
Small lumps may form when ghee is added to the flour for roasting .Gently press them with the back of a ladle or spoon to smooth them out.
Allow the jaggery mixture to bubble gently, but do not cook it to a string consistency as it can cause the jaggery to harden, resulting in brittle bites instead of a soft, smooth texture.
After adding jowar flour, mix just until the mixture comes together into a lump and leaves the sides of the pan.
Avoid overcooking to retain a soft, smooth texture.
Allow the mixture to cool completely and set before cutting into squares.
