Millet Nut squares are a wholesome homemade Indian sweet prepared with roasted jowar flour, jaggery, ghee and finished with a delicate topping of sliced nuts. Free from refined sugar, these soft smooth bites make a delightful festive treat for Diwali or an enjoyable everyday sweet .
Ingredients
- 1 cup Jowar atta
- 1/2 cup Jaggery powder
- 1/4 cup Ghee
- 1/4 cup Water
- 2 tbls sliced Almonds and Pistachios For garnish
Instructions
- Step 1 – Roast the jowar flour
- Heat 1 tablespoon of ghee in a heavy-bottomed pan. Add the jowar atta and roast over low heat for 8–10 minutes, stirring continuously. Take care not to burn the flour, as this can give it a bitter taste. Remove from the pan and keep aside.
- Step 2 – Prepare the jaggery syrup
- Add the jaggery powder and water to the pan . Heat until the jaggery dissolves completely and starts bubbling .
- Step 3 – Combine the ingredients
- Lower the heat , add the remaining ghee to the bubbling jaggery syrup and mix. Gradually add the roasted jowar flour, stirring continuously. Mix until everything is well combined, and forms a smooth lump and starts leaving the sides of the pan.
- Step 4 – Set, garnish and rest
- Transfer the mixture to a greased tray and spread evenly. Sprinkle sliced nuts over the surface. Allow it to rest until completely cool and set. Cut into 8 equal squares.
Notes
Roast the jowar flour carefully over low heat. Avoid over-roasting, as burnt flour can taste bitter.
Small lumps may form when ghee is added to the flour for roasting .Gently press them with the back of a ladle or spoon to smooth them out.
After adding jowar flour, mix just until the mixture comes together into a lump and leaves the sides of the pan.
Allow the mixture to cool completely and set before cutting into squares.
Allow the jaggery mixture to bubble gently, but do not cook it to a string consistency as it can cause the jaggery to harden, resulting in brittle bites instead of a soft, smooth texture.
Avoid overcooking to retain a soft, smooth texture.
