Ingredients

Ingredients

  • 2 cups jowar poha
  • 1 cup mixed vegetables ( carrot, beans, peas, capsicum etc) finely chopped
  • 2 medium onions finely chopped
  • 1 tomato finely chopped
  • ¼ cup peanuts
  • ½ teaspoon mustard seeds
  • ¼ teaspoon cumin seeds
  • 2 –3 green chillies finely chopped
  • Curry leaves
  • ¼ teaspoon turmeric
  • Salt to taste
  • 1 lemon
  • 1 -2 tablespoons oil
  • 1 small potato finely chopped — optional

Instructions

Prepare the Jowar Poha

  1. Rinse the jowar poha gently, drain well, and let it rest for a few minutes so it softens slightly.

Prepare the Vegetables & Tempering

  1. Heat oil in a wide pan and roast the peanuts until lightly golden and crisp. Reserve a small portion for garnish. In the same pan, add mustard seeds. Once they splutter, add cumin seeds, green chillies and curry leaves. Add the onions and sauté until soft and lightly golden, then add the mixed vegetables, turmeric and salt. Cook until the vegetables are tender while retaining a little bite.

Bring It Together

  1. Add the chopped tomato and cook until softened. Add the softened jowar poha and gently mix everything together. Cook for a few minutes until the poha is heated through and the flavours come together.

Finish & Serve

  1. Turn off the heat and squeeze fresh lemon juice over the poha. Give it a gentle toss. Garnish with the reserved roasted peanuts and fresh coriander leaves. Serve warm.

Notes

Jowar poha or  flakes can vary in thickness and hardness, so soaking time may differ. A brief soak, adjusted to the texture of the flakes, helps keep them light and separate and prevents them from turning soggy.
